My family and I went to the Costa Vida location in Tucson on Campbell and River (in the Trader Joes shopping center) for the first time recently and really enjoyed our experience. I wasn't sure what to expect and was impressed with everything, especially the fresh food and salsa options.

Costa Vida is locally owned and all ingredients are fresh and made daily. The entire menu is gluten free (with corn tortillas) and there are vegetarian options as well. The process is simple pick your meat/veggies and then add want you want inside your bowl, burrito, salad or tacos and then add want you want on top of your chosen dish. The items are sent through the oven which made the enchilada red sauce and cheese the perfect toppings for my chicken burrito. I really like different salsas and sauces and Costa Vida has this amazing spicy ranch sauce, a raspberry vinaigrette along with more traditional Mexican inspired sauces.

The kids meals include a drink and a dessert plus both sides of rice and beans (pinto, black or refired) for only $3.99. My kids had a chicken and cheese taco on a corn tortilla with rice and refried beans. My son LOVES horchata and that was an option at the drink station - no extra charge and refills included-score! There was also Vitamin Water, which is my favorite drink recently.
My husband who although can not say this Costa Vida is exactly the food his mom from Michoacan makes, he really liked his shredded beef (similar to birria) burrito and warm, fresh tortilla chips. He wants to go back and was happy that we were able to save a little room for dessert. The tres leches was our favorite and the kids devoured a freshly made flan.
