
We had breakfast for dinner tonight-An awesome recipe I found on-line and how much it cost with coupons....
Egg Muffin Essential Ingredients:
1 dozen eggs
1/4 c. cottage cheese
Cooking spray
Add-ins
Salsa
Vegetables
Meats
Cheeses
Anything you and your family enjoys in or with eggs
1. Heat oven on bake at 350 degrees
2. Spray 12-18 muffin cups with cooking spray
3. Mix1 dozen eggs in bowl w cottage cheese until yolks are pretty well mixed in
4. Add salt/pepper/seasonings to preference and all other add-ins
5. I add-in different things to different cups: (4-6) plain with cheese for my kids
(4-6) with veggie sausages, potatoes, cheese and medium salsa for me (6-8) with everything plus hot salsa and jalapenos for my husband
5. Bake for approx. 15-18 minutes until there are no runny eggs
take out and serve with sour cream, ketchup, salsa, avocado etc.
Store in seal-able plastic bag and re-heat for 10-20 seconds in the microwave.

It's such an enjoyable recipe! I'm also passionate about cooking and definitely plan to try this recipe soon. Recently, I made lava pizza, but it took so much time that I ended up missing my online class. As a result, I had to seek help from an online class provider, but at least I got to enjoy my pizza peacefully.
